The types of olives used
There are over 1000 olive varieties around the world. In Tunisia alone, we can find over 400. Each one yields a unique tasting experience. Some are intense and peppery, others are delicate and floral. Our two monovarietal oils, Intense and Delicate come respectively from Chetoui and Chemlali which are the two main olive tree varieties endemic to Tunisia. Our signature on the other hand, is a blend seasonally created by our Sommelier from Chetoui, Chemlali, Picholine, Koroneiki, Coratina and Ascolana.

Signature olive oil is made each year in very limited
quantities from only the finest olives. This is an elegant
and versatile oil with plenty of character. It has a wellbalanced flavour and a high polyphenol content.

DELICATE
A light, delicate monovarietal organic extra virgin olive
oil, made from Chemlali olives, which produce oil with
a golden colour and a high polyphenol content. Its mild
and balanced taste makes it a very versatile oil.

INTENSE
A superb quality monovarietal organic extra virgin olive oil
made from Chetoui olives which produce a distinctive oil
with very high polyphenol content. It has a robust and lively
flavour with a peppery finish, which can add depth and
character to a wide range of recipes.
