A seasoned engineer and steward of the land, Hichem oversees our farming operations with a meticulous eye and a farmer’s heart. He ensures every olive is grown with care, using the best agricultural practices and the gentlest touch of technology. Weekends? You'll find him under the Tunisian sun, tending to the grove and hosting legendary barbecues—naturally, drizzled with olive oil

The Mill Maestro
Born in Tunisia, refined in Canada. Hichem C. blends business acumen with a baker’s sensitivity for ingredients. After years running a bakery in Toronto, he returned to the land that raised him—answering the olive grove’s irresistible call. Today, he leads our milling with a relentless pursuit of quality and sustainability, crafting oils that respect both tradition and the environment
Alison & Mo Ellouze
The Ambassadors
Based in London, this dynamic duo fell in love with each other—and then with Tunisia’s liquid gold. Alison, a proud Brit, discovered the secret world of Tunisian organic olive oil during a visit to the family grove with Mohamed, her husband and co-founder. Shocked that the world hadn’t caught on yet, they made it their mission to share this treasure abroad. Together, they head sales and business development, championing Ellouze 1870 across borders, health expos, and wherever good taste is celebrated
