Because we oversee the entire journey — from nurturing the trees to hand-harvesting, pressing, and bottling, we are able to ensure a consistent focus on quality. Every bottle reflects our commitment to excellence, flavour, and nutrition.
We are committed not only to producing exceptional quality olive oil but also to ensuring that the production remains sustainable for future generations. We marry traditional farming practices, such as the hand-picking of olives, with modern technologies, such as solar-powered irrigation and processing waste products into bio-fuel which is used to power the mill and natural fertilizer which feeds the trees.

Family crafted excellence
The Ellouze family oversees the entire journey — from nurturing the trees to hand-harvesting, pressing, and bottling. This hands-on approach ensures a consistent focus on quality. Every bottle reflects our commitment to excellence, flavour, and nutrition.

Ethical, sustainable and organic
We follow traditional organic methods — no chemicals, no shortcuts. Our trees are spaced 24 meters apart, encouraging natural growth and disease resistance. Olives are handpicked, protecting the trees for future harvests. Waste from pressing is reused as biofuel or fertilizer, and irrigation is solar-powered.

Community focus
Our role in the community runs deep: we established the area’s first school and continue to employ and support local workers, including pressing olives for farmers without their own facilities.

Community Focus
Buy Women Built
Our olive oil is crafted with care, fairness, and respect — the same values we hold for the women who help build Ellouze 1870. That’s why we’re proud to be part of the Buy Women Built community.
