The Power of Tunisian Terroir
Tunisia stands as the world's largest producer of organic extra virgin olive oil, an accolade that speaks volumes about its ideal Mediterranean climate and nutrient-rich soil.
The diverse climatic conditions, particularly the arid and semi-arid regions, contribute significantly to the unique characteristics of Tunisian olive varieties. Importantly, Tunisian olive trees, due to their natural suitability to this environment, require very little use of chemicals, such as pesticides and nitrogen fertilizers, with 95% of its olive groves being organic. This commitment to organic and sustainable farming methods means "healthier soils make healthier oils," ensuring a pure product, free from harmful residues, and directly contributing to its nutritional integrity.

Olive Spotlight: Tunisia's crown jewel
The Chemlali olive
The Chemlali olive is Tunisia's crown jewel - a hardy, drought-resistant variety that has adapted perfectly to our Mediterranean climate. These small but mighty olives produce oil with exceptional stability and a distinctive mild, fruity character that sets Tunisian olive oil apart from other Mediterranean producers.
Our Process
The Foundation of Exceptional Flavor
At Ellouze1870, we cultivate exceptional olives, including varieties that have thrived in Tunisian soil for centuries. Each variety contributes unique characteristics to our award-winning olive oil collection, creating flavor profiles that reflect both our North African heritage and Mediterranean expertise.

Hand-Picked Olives
Hand-picking is part of Ellouze 1870's meticulous process for crafting premium organic olive oil. This ensures olives are carefully harvested immediately before cold-pressing, contributing to the oil's exceptional quality and freshness

Organic Farming
Ellouze 1870's meticulous organic farming strictly avoids all chemicals and fertilisers. This commitment ensures their olives are naturally grown, producing Certified Organic oil through an environmentally conscious process.

Sustainable Cold-Pressing
Our two-phase extraction process separates olive paste into oil and wet pomace without adding water, significantly reducing its environmental impact by eliminating polluting vegetation water and conserving water resources. This method ensures a higher polyphenol content in the oil, leading to richer flavour and improved stability

Cultivated in our groves for 150+ years
Our Trees
Our olive trees, many planted by Hassan Ellouze himself in 1870, benefit from traditional 24-meter spacing that allows for extensive root systems and natural disease resistance. This traditional planting method means our trees thrive without chemicals, producing consistently exceptional fruit year after year.
